Make Sweet Corn Quesadillas Tonight

Here’s what you’ll need:

  • 8 small (or fajita-style) tortillas
  • 2 teaspoons olive oil
  • 1 1/2 cups (6 ounces) grated Monterey Jack
  • 1/2 small red onion, thinly sliced 
  • 2 cups corn kernels, fresh or frozen and thawed
  • 2 jalapenos, with seeds removed and finely chopped
  • 1/2 cup fresh cilantro leaves
  • Sour cream and salsa

Here’s what you’ll do:

  1. Heat oven or toaster oven to 400° F.
  2. Brush one side of each tortilla with the oil. Turn the tortillas over and top with the Monterey Jack, onion, corn, jalapenos, and cilantro. Sandwich with the remaining tortillas, oiled-side up.
  3. Working in batches, if necessary, transfer the quesadillas to a foil-lined toaster-oven tray. Bake, turning once, until the cheese melts, 6 to 8 minutes total. Serve with the sour cream and salsa.Thanks, RealSimple.com, for this yummy recipe!

You will need: 

  • ¼ cup white vinegar
  • ¼ cup vegetable oil
  • 1 Tbs. sugar
  • 2 cloves garlic, minced (2 tsp.)
  • ½ tsp. dried oregano
  • ½ tsp. dried basil
  • 1 15-oz. can black beans, rinsed and drained
  • 1 15-oz. can pinto beans or black-eyed peas, rinsed and drained
  • 1 ½ cups fresh corn kernels (or canned, rinsed and drained)
  • 1 red, yellow, or orange bell pepper, finely chopped (1 cup)
  • ½ small red onion, finely chopped (½ cup)
  • 1 2-oz. can diced green chiles with liquid
  • ¼ cup chopped cilantro (optional)

You will:

1. Mix well the vinegar, oil, sugar, garlic, oregano, and basil in large bowl.

2. Stir in black and pinto beans, corn, bell pepper, onion, chiles, cilantro, pepper and salt.

Refrigerate 1 hour before serving. (This makes about 4 servings.)

Make a NINJA Breakfast

You will need:

  • 2 cups old fashioned rolled oats
  • 1/2 cup walnuts, in small pieces and toasted
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and cooled slightly
  • 2 teaspoons pure vanilla extract
  • 2 ripe bananas, cut into 1/2-inch pieces
  • 2 cups blueberries, or mixed berries
  • Vanilla yogurt (not plain which will be too sour tasting)

 

You will:

Preheat the oven to 375°F  Generously butter the inside of an 8-inch square baking dish or small casserole (as shown in photo.)

In a bowl, mix together the oats, half the walnuts, the sugar, the baking powder, cinnamon, and salt.

In another bowl, whisk together the milk, egg, half of the butter, and the vanilla.

Arrange the bananas in a single layer in the bottom of the prepared baking dish. Sprinkle a little more than half of the berries over the top. Add the oat mixture. Gently add the milk mixture over the oats and be sure it soaks into the oat mixture.  Add the remaining berries, butter and remaining walnuts across the top.

Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes.

Serve warm with a covering of vanilla yogurt and a few blueberries. This stores well in the refrigerator so you can have it warmed with yogurt and berries for a quick power breakfast!

Power Smoothie:

You will need:

  • 1/4 cup rolled oats, cooked beforehand
  • 1/2 cup 2% milk
  • 1/3 cup plain Greek yogurt
  • 1/2 teaspoon ground cinnamon, plus more for dusting
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon pure maple syrup
  • A small squeeze of fresh lemon juice
  • 1 fresh date, pitted and chopped (optional)
  • 1 cup frozen blueberries

You will:

  1. Cook oats in a microwave-safe bowl. Set aside.
  2. To a blender add milk, yogurt, cinnamon, vanilla, maple syrup, lemon juice, date (if using), frozen blueberries (less, if you like it thicker) and cooked oats. Blend on high until smooth.
  3. Pour into a glass or jar. Finish with a light dusting of cinnamon on top.

‘Deluxe “Cold Chocolate” Dessert Unamoothie!’ I tested it out and my mom and I agreed it was delicious. INGREDIENTS: > Chocolate Milk. I used rice milk (my parents are vegan) and mint chocolate syrup, but you can use premade stuff too. > Cinnamon. A few sprinkles on top, I put on a ton, because I love cinnamon. > Nutmeg. WARNING: For us, the nutmeg went to the bottom, so if you love nutmeg, make sure you get the last pour out of the blender! > Ice! Amount depends on how icy or smooth you prefer your drink. and Blend

Sydney’s Purple Mango Pineapple Smoothie:

Ingredients:

3/4 cup orange juice(you can substitute plain yogurt)
2 pieces frozen peach
1/4 a mango
11/2 cup crushed pineapple
3 blackberries
1 strawberry
1/4 cup ice

Supplies: Blender, knife for cutting fruit

Directions:
Pour orange juice into blender. Add mango, peach, pineapple, blackberries, the strawberry
and ice. Blend until no solid chunks left. Serves 1 person. Enjoy!

‘Blueberry Frost Smoothie’

Ingredients:

1 cup of blueberry
1 cup of yogurt (vanilla is best, but you can decide)
1/4 cup of milk
2 cups of ice

Make like this:

Put ice, yogurt, and milk into blender. Blend until smooth, then gradually add in blueberries. Once it’s smooth, pour into glass, and voila! I hope you like!
