You will need:

  • 10 cups water/broth
  • 1 pound dried split peas
  • 2 Tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, chopped
  • 1 Tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1/4 teaspoon crushed red peppers
  • 1 teaspoon salt
  • 1/2 cup milk
Directions:
Wash the split peas and put them into a large pot with 10 cups of broth or water (or some of each).
Bring this to a boil and turn down the heat. Simmer for 2 hours.
Now grab your BFF and a parent and cook the onion and garlic in olive oil for about 7 minutes. Add the other seasonings and pour all of this mix into the large pot with the split peas. Cover and cook at low heat for 30 minutes.
If you like a thick soup, puree some of this mix in a blender.
Add 1/2 cup of milk and warm up to serve with milk, sour cream, and fresh scallions.
This split pea soup is a great source of protein, fiber, potassium, vitamins A and C, calcium and iron.
